Tzatziki is a classic Greek appetiser, (meze) dip made from thick strained yoghurt , cucumber , garlic and dill. This creamy yoghurt sauce is very versatile and is a perfect accompaniment to many Mediterranean dishes.

INGREDIENTS:

  • ½ cup plain Greek yogurt ( or hung curd)
  • 1tbsp fresh dill chopped
  • ½ tsp mint leaves chopped
  • 1-2 clove garlic, minced
  • ½ cucumber 
  • ¼ tsp salt
  • ¼ tsp black pepper 
  • 1-2 tsp lemon juice
  • ¼ tsp Cayenne pepper

INSTRUCTIONS:

  • Grate the cucumber, add a pinch of salt and leave aside for 10 mins. Then gently squeeze the cucumbers ( or use sieve) to separate the liquid from the cucumber.Discard the cucumber juice or use in another recipe. U can even drink the juice ( no wastage ) Separating  the juice from the cucumbers helps the Tzatziki to remain creamy ( not runny) 
  • Add the cucumber to the Greek yoghurt
  • Add minced garlic and cayenne pepper, salt and black  pepper 
  • Add freshly squeezed lemon juice 
  • Add chopped mint and dill
  • Stir the yoghurt
  • Taste and adjust seasoning
  • Chill in refrigerator for at least 2-3 hours before serving (overnight is good too) 
  • Transfer to a serving bowl and garnish with dill leaves. Sprinkle black pepper and cayenne pepper.
  • Your delicious dip is ready
