Tzatziki is a classic Greek appetiser, (meze) dip made from thick strained yoghurt , cucumber , garlic and dill. This creamy yoghurt sauce is very versatile and is a perfect accompaniment to many Mediterranean dishes.
INGREDIENTS:
- ½ cup plain Greek yogurt ( or hung curd)
- 1tbsp fresh dill chopped
- ½ tsp mint leaves chopped
- 1-2 clove garlic, minced
- ½ cucumber
- ¼ tsp salt
- ¼ tsp black pepper
- 1-2 tsp lemon juice
- ¼ tsp Cayenne pepper
INSTRUCTIONS:
- Grate the cucumber, add a pinch of salt and leave aside for 10 mins. Then gently squeeze the cucumbers ( or use sieve) to separate the liquid from the cucumber.Discard the cucumber juice or use in another recipe. U can even drink the juice ( no wastage ) Separating the juice from the cucumbers helps the Tzatziki to remain creamy ( not runny)
- Add the cucumber to the Greek yoghurt
- Add minced garlic and cayenne pepper, salt and black pepper
- Add freshly squeezed lemon juice
- Add chopped mint and dill
- Stir the yoghurt
- Taste and adjust seasoning
- Chill in refrigerator for at least 2-3 hours before serving (overnight is good too)
- Transfer to a serving bowl and garnish with dill leaves. Sprinkle black pepper and cayenne pepper.
- Your delicious dip is ready
