  • 2 cups all-purpose flour
  • ¾ cup chocolate chips
  • ½ cup unsweetened cocoa powder
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon baking soda
  • 1 cup plain yogurt
  • ½ cup milk
  • ¼ cup chocolate chips
  • 1 teaspoon vanilla extract
  • ½ cup vegetable oil

This chocolate muffin recipe is so easy and makes an incredibly moist and chocolatey muffin as the batter is made with cocoa powder with added chocolate chips for a more decadent muffin. You can use the muffin mixing method to create soft, fluffy, and moist muffins. The method will also reduce the amount of gluten formation in your muffin. 

Step 1: Mix Dry Ingredients

To start, combine all your dry ingredients (flour, cocoa powder, granulated sugar, baking powder, and salt) in a mixing bowl and whisk them together using the best all purpose whisk.  

Step 2: Mix Wet Ingredients

Next, combine and whisk all your wet ingredients (milk, egg, oil, and vanilla extract) using a separate bowl.

Step 3: Combine Dry and Wet Ingredients

Combine the wet ingredients with the dry ones and mix using a spoon or a rubber spatula until combined. Also, fold in the chocolate chips and incorporate them with the batter.

Step 4: Bake the Muffins

Portion the batter in a muffin tin and put more chocolate chips on top if desired. This batter can make 10-12 muffins depending on how big your muffin tin wells.

You can also bake using paper liners or spray the muffin tin with non-stick spray, so your muffins won’t stick.

The secret to getting a perfectly-domed muffin top is to start baking them in high heat. You can bake them at 425 F (220 C) for the first 10 minutes of your baking time.

This high heat will rapidly evaporate the water from the muffins, creating steam, which will help the muffins rise swiftly. Once these muffins undergo the initial burst of heat, finish baking them at a lower temperature.

Tips in Making Moist Chocolate Muffin

  • You can use any liquid fat for these muffins, but the fat that stays liquid at room temperature (like olive, canola, or vegetable oil) will result in muffins that remain tender when cooled.
  • Sprinkle the top of your muffin with more chocolate chips to make it extra gooey and pretty.
