This Pullman style “Honey Shokupan – sandwich bread” has very fluffy crumb because of the honey. It is great by itself after slicing into your desired thickness or enjoy it toasted with butter or make a sandwich with your favorite fillings! If you don’t have the Loaf Pan don’t worry, you can substitute with the milk carton box!

INGREDIENTS for 1 loaf (app. 20cm x 12cm x 10cm / 8in x 4.5in x 4in)

  • 300g Bread Flour
  • 30g (1+1/3 tbsp) Honey
  • 4.5g (3/4 tsp) Salt
  • 3.6g (1+ tsp) Dry Yeast
  • 18g Butter (Room temperature)
  • 90ml Milk (Lukewarm around 35°C/95°F)
  • 115ml Lukewarm Water (around 35°C/95°F)

INSTRUCTIONS

  • Prepare the bread dough with above ingredients following the “Basic Bread” https://crew-explorer.com/basic-bread-baking-guide/ instructions until dividing the dough into 3 equal size balls
  • When placing the Honey, it will be easy if you dilute into the lukewarm Milk
  • Spray bit of water and cover with plastic wrap and let them rest around 15 min
  • After Resting the dough, form the dough as shown below
  • Place the seam side up and press with your hand to make a round shape
  • Use the Rolling pin to shape the dough into a rectangular shape
  • Fold 1/3 towards the middle, then 1/3 from the other side
  • Press the dough with the Rolling Pin to remove the excessive gas
  • Roll the dough from further side tightly and make sure the seam is closed tightly
  • Place 3 rolled dough in the Loaf Pan with seam facing down
  • Spray a bit of water and cover with plastic wrap/Shower Cap, then Proof the dough until they become about 80% height of the Loaf Pan (Around 60 min or more)
  • Preheat the oven to 190°C (375°F) around 10 min before the Proofing is finished
  • Put the lid on the Loaf Pan and place the Pan into the oven and bake for 25 min
  • After the bread is ready, drop the Pan on the hard surface to get rid of the excessive gas to avoid shrinking later and take out the bread from the Pan
  • Cool the bread on the cooling rack

How to make Loaf Pan with the Milk Carton Box

  • Cut the Carton Box as shown below
  • Fold the top part of the Carton Box and close it with the stapler
  • Cut the Baking Paper to fit the Carton Box Pan (Don’t forget the Lid part!)
  • Before placing the Carton Box Pan in the oven, remember to wrap it with the tinfoil to have better heat conduction
  • Instead of 190°C (375°F), preheat the oven to 180°C (356°F) and bake for 20-25 min.

  • 200g Bread Flour
  • 20g (1 tbsp) Honey
  • 3g (1/2 tsp) Salt
  • 2.4g (1- tsp) Dry Yeast
  • 12g Butter (Room temperature)
  • 60ml Milk (Lukewarm around 35°C/95°F)
  • 80ml Lukewarm Water (around 35°C/95°F)

    • Don’t worry, it will not burn. The ignition temperature of paper is around 233 Celsius. But the coating of the carton might melt a bit so have to line with the baking paper & wrap with tinfoil. I used few times to bake and there’s no problem 😉
