Molletes de Antequera is a very soft fluffy and moist Spanish Muffin originated from Andalusia area. It is a typical breakfast bread enjoyed with drizzle of nice olive oil, tomato and sometimes with their delicious ham! If you have a sweet tooth, it goes very well with Hazelnuts spread, too!
INGREDIENTS for 6 Pieces
- 250g Bread Flour
- 5g (3/4 tsp) Salt
- 1.5g (1/2 tsp) Dry Yeast
- 25ml Olive Oil
- 165ml Lukewarm Water (around 35°C/95°F)
INSTRUCTIONS
- Prepare the bread dough with above ingredients following the “Basic Bread” https://crew-explorer.com/basic-bread-baking-guide/ instructions until before you add the olive oil to the kneaded dough
- Add Olive Oil and knead for 1 min then let the dough rest for 10 min
- Repeat the 1 min kneading + 10 min resting for 3-4 times
- Finally knead the dough until the Olive oil is well mixed
- Place smooth surface ball shaped dough into the bowl and leave the covered bowl in the room which has around 25°C/77°F or more or use the Fermentation function in the oven if you have. Proof the dough until it becomes about twice the size. (Around 40 min-1 hour, depends on the temperature.)
- Divide the dough into 6 equal sizes and make them into ball shapes with smooth surface
- Spray bit of water and cover with plastic wrap and let them rest around 15 min
- After Resting the dough, form the dough as shown below
- Press the ball shaped dough with your finger tips to make an oval shape
- Thickness shall be around 2cm (0.8in)
- Place them on the Baking tray lined with Cooking Liner/Baking Paper
- Spray bit of water again and cover with plastic wrap/big container, then Proof the dough until they become about twice the size (Around 30-40 min.)
- Preheat the oven to 180°C (360°F) around 10min before the Proofing is finished
- Sprinkle bit of flour on the formed dough using the Strainer
- Place the Baking tray into the oven and bake for 13 min (Make sure you won’t get much golden colour on the surface!)
- After the bread is ready, cool the bread on the cooling rack
