This Quinoa Upma is quick and easy to prepare and a perfect healthy protein-rich meal. It’s low carb and vegan.
INGREDIENTS:
- 1cup quinoa
- 1medium onion chopped
- 1-2 green chili sliced
- ½ cup diced carrots
- ¼ cup diced beans
- 1tsp mustard seeds
- 1-2 tsp Urad dal
- 1-2 tsp Chana dal
- Few cashews
- 2cups of hot water
- Pinch of Hing
- Few curry leaves
- Coriander leaves
INSTRUCTIONS:
- Wash and rinse quinoa for a few times to remove bitterness
- Soak in water until you prepare other ingredients
- Heat oil in a pan
- Add mustard seeds and let them splutter
- Add urad dal, Chana dal
- Fry until dals turn brownish in color
- Add Hing and green chilies
- Add onions and fry for 2-3 mins until translucent ( no need to brown them)
- Add curry leaves and vegetables and cashews
- Add salt
- Add drained quinoa
- Mix well for 1-2 mins
- Add enough hot water to cook quinoa and vegetables ( quinoa to water ratio is 1:2)
- Cover and cook on low flame 10-15 mins until quinoa is cooked
Your healthy and tasty quinoa Upma is ready
